Zen's Carrot Soup

1. chop carrot by holding it in your left hand,
and carefully cutting in a short distance with a knife,
and twisting to break off a very small piece.

The jagged edge supposedly improves flavour
according to a Cornish farmer's wife
who made her pasties that way.

Takes a while to do,
but is very therapeutic.

2. add lots of olive oil
( I had red palm & canola oil too ),
and something like soy sauce.

3. you can add very small bits of other vegetables if desired.

4. bring to boil,
then simmer gently until nice and soft
( the slower, the better ).

Sometimes you can vary it
if you like it crunchier for a change -
or put in a raw handful or two later,
so that some of it is cooked less.

Experiment!

5. great hot or cold.

If I had a blender,
I would make a vegetable drink
as I have been drinking V8,
and it is £1.33 a litre - ouch!

Sometimes supermarkets sell off
short-dated bags of carrots for pennies
-
that is the time to buy a few bags,
and make soup!
